How to make Georgia Peach Tea

With Southern peach crops taking a hit this year after an unseasonably warm winter, you may need to get a bit creative in order to get your fill of Georgia's juicy staple of summer. Ruth's Chris Steak House's Georgia Peach Tea, made with peach vodka and fresh peach puree, proves an attractive alternative to the real thing.

"It's like sweet tea with a kick," says Wilson Oswald, Ruth's Chris director of beverage. "I think it's the perfect combination of sweet and refreshing - a perfect porch-sipping, outdoor cocktail."

What you need:

  • 2 ounces freshly brewed sweet tea
  • ounce fresh peach puree
  • ounce lemon sour (Ruth's Chris uses its own house-made version, but you can create your own by mixing equal measurements of sugar, cold water and fresh lemon juice, and shaking vigorously.)
  • 1 ounces Deep Eddy Peach Vodka
  • 1 orange slice, for garnish
  • 1 maraschino cherry, for garnish

What you do:

  1. In a cocktail shaker, combine peach puree, lemon sour and vodka.
  2. Add ice. Shake vigorously and strain into beverage glass.
  3. Add sweet tea. Garnish with orange slice and cherry, and serve.

A peachy pair

The drink would pair well with a seafood appetizer, Oswald says, such as Ruth's Chris' Crab Stack, with avocado and mango to complement the peach.
