Got ripe bananas? These peanut butter banana chocolate chip cookies make a great last-minute gift for mom that's much easier than baking a loaf of banana bread.
Yield: 2 dozen cookies
What you need:
2 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon corn starch
teaspoon salt
cup (1 stick) unsalted butter, softened
2 medium ripe bananas, peeled and mashed
1 cup brown sugar
cup granulated sugar
2 teaspoons vanilla extract
1 cup chocolate chips
1 cup peanut butter chips
What you do:
1. Heat oven to 375 F and line two cookie sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, cornstarch and salt; set aside.
3. In a separate bowl, mix butter, bananas and sugars together until combined. Add vanilla extract and mix until combined.
4. Stir in the flour mixture until combined. Stir in chocolate and peanut butter chips.
5. Cover and refrigerate dough for 30 minutes.
6. Scoop cookie dough onto prepared cookie sheets. Bake cookies for 10-12 minutes, until they start to turn light, golden brown on top.
7. Let cookies cool completely on cookie sheets. Store in airtight containers for up to a week.
