Triple sink is not large enough for large hotel size pan to fit and soak in sanitizer compartment. Cooler was 46, degrees food inside over 50 degrees was discarded. Food in coolers with no dates. Styrofoam cups being used to measure ingredients. Floors soiled.

Chicken sitting at room temperature and not under temperature or time control at breading station. Product was holding at 62*F. Product was discarded at time of inspection. Uncovered/unprotected food items noted in walk in cooler unit. Excessive ice build up noted in walk in freezer unit. Cardboard used as a shelving liner for food in walk in cooler. Several non-food contact surfaces dirty in prep/dishwashing areas. Garbage noted on ground around refuse area.

Inspector unable to locate thermometers in freezer unit. Wet wiping cloths stored on working surfaces and not in sanitizer solution. In-use utensil stored in standing water.
