The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.

To file a health-related complaint, call the Department of Environmental Health at 423-209-8110. The scores are original and do not reflect on-the-spot changes, which sometimes lead to upward adjustments.

Reasons including staff not been properly trained on cooling procedures, required temperatures for cold holding, no managerial control over food handling. Staff did not know health policy and no policy was postedStaff eating in back of kitchen. Food stored over rack with pans. No water at sink in back kitchen, sink blocked by pans. Triple sink not set up for sanitizing, washing in sanitizer compartment , pans and sinks soiled with old food collected. Triple sink is not large enough for large hotel size pan to fit and soak in sanitizer compartment. Cooler was 46, degrees food inside over 50 degrees was discarded. Food in coolers with no dates. Styrofoam cups being used to measure ingredients. Floors soiled.

Reasons including manager on duty unaware of specific reportable symptoms and food-borne illnesses at time of inspection. Chicken sitting at room temperature and not under temperature or time control at breading station. Product was holding at 62*F. Product was discarded at time of inspection. Uncovered/unprotected food items noted in walk in cooler unit. Excessive ice build up noted in walk in freezer unit. Cardboard used as a shelving liner for food in walk in cooler. Several non-food contact surfaces dirty in prep/dishwashing areas. Garbage noted on ground around refuse area.

Reasons including no hand soap/paper towels provided at handsink by ice machine. Hand sanitizer can not be used in lieu of handsoap. Raw chicken stored above cooked rice in low boy unit. Items were moved at time of inspection to reduce risk of cross-contamination. Proper cooling method not provided for grilled chicken cooling in walk in cooler. Inspector unable to locate thermometers in freezer unit. Wet wiping cloths stored on working surfaces and not in sanitizer solution. In-use utensil stored in standing water. Some non-food contact surfaces dirty in kitchen/prep area.

Reasons including unapproved drink containers in facility. No hand drying provisions provided at back food service hand-washing sink. Chicken breasts sitting on tray in an exposed, ripped open bag. Multiple containers of various batter mixes unlabeled.  Walk-in freezer floor with soil and food on floor.
