It starts with Romaine lettuce, then is topped with chipotle-seasoned chicken - "smoky, not spicy," said restaurant owner Norman Skinner. Also in the mix are red, green and yellow bell peppers, cherry red tomatoes and a bit of red onion. The salad is finished with roasted corn and black beans. Top it with the house Southwestern dressing or balsamic vinaigrette. "People love it and are always asking for it," Mr. Skinner said. "It's a large serving that makes a meal."
